Turkey Shepherd's Pie

Ingredients:
  • 1 lb ground turkey

  • 1 small onion,chopped

  • ½ green pepper,chopped

  • 2 small celery stalks, thinly sliced

  • 2 medium carrots,peeled and thinly sliced

  • 3 tablespoons tomato paste

  • Salt, pepper and dried herbs of choice to taste

  • 2 cloves fresh garlic, crushed

  • 1 teaspoon sweet rice flour or arrowroot flour to thicken

  • 1 tablespoon Ghee or avocado oil

  • 3 large potatoes or about 1 ½ medium sweet potatoes, peeled and cut into even sized pieces

  • ¼ cup chicken stock

Directions:

Mashed potatoes

 

  1. Bring pot of water to the boil and add potatoes/sweet potatoes.

  2. Cook until tender,roughly 25 minutes. They should be so tender that they’ll fall apart when pierced with a fork. Drain any remaining cooking water.

  3. Warm your chicken stock.

  4. In the potato pot, add salt and pepper, and gradually add chicken stock while mashing thepotatoes to desired consistency.

 

Turkey

 

  1. Preheat oven to broil.

  2. Preheat large sauté pan on medium-high for 2-3 minutes and add 1 tablespoon ghee or avocado oil.

  3. Add onion, green pepper, celery and carrots and cook 4-5 minutes, stirring occasionally or until vegetables start to brown.

  4. Stir in the turkey; cook 5-7 minutes, stirring to crumble meat, until meat is brown.Stir in tomato paste, seasoning and garlic; reduce heat and simmer 3 minutes

  5. Mix 1 teaspoon sweet rice flour or arrowroot flour with a little water to form a paste. Stir into turkey mixture, adding another ½ teaspoon (mixed to a paste) if a thicker consistency is desired. Alternatively, add a little water to the pan if it becomes too thick.

  6. Spoon turkey mixture into baking dish, spread mashed potatoes evenly over turkey mixture and broil 5 minutes or until golden.
