Creamy Vegan Green Beans

Ingredients:

1 lb green beans

1 medium sweet onion, chopped

2 cloves garlic, minced

6 button mushrooms, slices

1/4 cup coconut cream

1 tsp Bob's Red Mill 1-to-1 gluten-free baking flour

2-3 tbs water

1 tbs Nutritional Yeast

1 tsp ghee or 1 tbs avocado oil

salt and pepper to taste

Directions:
  1. Heat frying pan on medium heat and add oil.

  2. Add onions and mushrooms and cook until onions become translucent.

  3. Mix baking flour with 1 tbs water and stir to form a paste

  4. Add green beans, garlic, salt, pepper, Nutritional Yeast and 1-2 tbs water to the pan, cover and reduce heat. Simmer for 5-6 minutes, stirring halfway through cooking time.

  5. Stir in coconut cream and baking flour paste. Continue stirring until sauce thickens.
