Quinoa & Kale Salad

  • ½ cup of pre-cooked quinoa

  • 2 cups of pre-washed kale

  • 1 tablespoon fresh lemon juice

  • A squeeze of fresh lime juice

  • Grated or shredded carrots

  • Pumpkin seeds

  • Sliced almonds (you can dry roast these in a non-stick pan to give some great flavor)

  • ½ avocado

  • Olive oil to drizzle

  1. Use your pre-washed kale and chop it into thin strips.

  2. Squeeze the fresh lemon and lime juice over the kale and massage with your hands until it turns dark green and you’re squeezing a significant amount of juice out of the kale. This helps to break the cell wall of the kale, making it much easier to digest.

  3. Add the remaining ingredients and season with salt and pepper as desired.
